Texas Caviar Drain and Mix in bowl: can black-eye peas can of pinto beans can of kidney beans can of black beans, drain and rinse can of Mexican corn green onions 1 diced tomato 1 diced green pepper Dressing: 1 tsp salt 1/2 tsp pepper 1 Tbsp water....yes, 1 Tbsp of water! 3/4 cup cider vinegar 1/2 cup oil 1 cup of sugar...I usually cut back to 3/4 cup Boil dressing and pour over bean mixture. Marinade overnight in refrig. When ready to serve, drain most of the dressing off but save the dressing to return any uneaten beans... the dressing is a preservative so the mixture will last up to 3 weeks. Serve with Fritos or tortilla scoops.
